Horsehair canvas vs fusible interfacing for a jacket, is the hand stitching worth it?

Im making a second jacket and I want to do it better than the first. I used fusible last time and it was fine but the front has slightly stiffened over time. Is horsehair canvas genuinely better or is that just what people say? And is it worth learning the pad stitching from scratch?
